Jonathan Hernandez has won the latest Talin World Chef challenge!  His winning recipe, “Not Your Average Cheese Bites” combines sweet and savory flavors in a new way.  It’s even got fresh, homemade cheese! Packed inside each fried nugget is a sweet and fruity cheese center.  Enjoy!

Not Your Average Cheese Bites

Golden Kiwi Cheese

  •   1/2 Gallon Whole Milk
  •   1/2 Pint Heavy Cream
  •   1 tsp Buttermilk
  •   1/2 tsp Calcium Chloride
  •   Pinch of Citric Acid
  •   5 Drops of Liquid vegetable Rennet
  •   1/2 tsp Salt
  •   2 Golden Kiwis

Sweet & Spicy Blue Cheese Dip

  • 1/3 Cup Blue Cheese
  •   1/3 Cup Buttermilk
  •   1/4 Cup Light Mayo
  •   1 tsp Balsamic Vinegar
  •   1 Tbsp Palm Sugar
  •   1/4 tsp Salt
  •   Crushed Chili to taste
  •   Pepper to taste

Pizza Dough
5-7 Slices Prosciutto
1/3 Cup Flour
1 1/2 Cups Peanut Oil

Important Note: During the cheese making process the utensils, countertops, dishes, hands etc. need to be fully sanitized with hot water and bleach.

Start by adding Milk and Heavy Cream to a double boiler on medium heat and slowly bring Milk to 85°F stirring frequently to avoid scalding. Add in Buttermilk. Dissolve Calcium Chloride in a separate cup with ¼ cup warm water then dissolve pinch of Citric Acid. Add to milk, mix well. Remove Milk from heat then add Rennet to separate cup with ¼ cup cold water and let sit for 5 min then add rennet to milk. Let sit at room temperature for 45 Min to 2 Hours until the milk curds.

Cut with knife in the pot into ½ inch squares. Return to boiler and bring temperature of curds to 85°F. Stirring VERY gently to break curds into small chunks. Once the chunks are firm (About 15-25 min) strain off Whey (liquid) and put curds into a bowl. Mix with chopped Golden Kiwi and set in safe place in room temperature overnight.

The next day:
Pull pizza dough out of freezer, and set in bowl with olive oil to rise.

Making the Dip:
Add Blue Cheese, Buttermilk and Mayo to mixer or chopper and mix on high until creamy, and then add in Vinegar, Palm Sugar and salt. Mix again for a few seconds. Add Crushed Chili and Pepper to taste.

When the dough has doubled in size add an equal amount of Kiwi Cheese to dough ratio in mixer. Mix on low, adding flour to help the mixing process. Chop Prosciutto to 1/8 inch cubes and mix in with dough.

Bring peanut oil to 350°F – 375°F for frying. Add Cheese dough with a large spoon to peanut oil to fry.

Serve with Sweet and Spicy Blue Cheese Dip.

    Today, I went to thee beachfront with my children.
    I found a ssea shell aand gave it to my 4 year
    old daughter and said “You can hear the ocean if you put this to your ear.” She plached thee shell to her ear and screamed.
    Thee was a hermit crab inside annd it pinched herr ear.
    Shhe never wants to go back! LoL I know thiis is totaly off topic
    but I had to tell someone!
